This works great with bone- in chicken as well, add 10 minutes to cook time.
For the vinegar: Use any type: White, Apple cider or Balsamic
For the citrus juice: Use any kind: Orange, Lemon or Lime
Garnish with parsley, basil or cilantro, depending on what kind of vinegar and juice is used
Ingredients
- 4 boneless, skinless chicken breast
- 1 Packet Italian dressing mix
- 1/4 C vinegar, any kind
- 3 T. water
- 1/2 C oil, any kind of cooking oil
- 1/2 C ketchup
- 1/4 C citrus juice, any kind
Instructions
- Preheat oven to 375º
- Place chicken breasts in a 9″ x 13″ baking dish
- Mix remaining ingredients in cruet or small bowl
- Poke each piece of chicken 5-6 times with fork
- Pour dressing mix onto chicken
- Bake for 30-35 minutes
- Optional – Brown chicken in frying pan or on grill after removing from oven
- Let rest for 10 minutes before serving
