One hearty and delicious camping breakfast recipe is “Campfire Breakfast Hash.” It’s a one-pan meal that combines hearty potatoes, savory sausage, flavorful vegetables, and eggs, all cooked together over a campfire or camp stove. Here’s how to make it:
Ingredients
- 4 medium potatoes, diced
- 1 onion, chopped
- 1 bell pepper, diced
- 4-6 cooked sausages, sliced into rounds
- 4 eggs
- Salt and pepper, to taste
- Olive oil or butter, for cooking
- Optional toppings:
- Shredded cheese
- Chopped fresh herbs (such as parsley or chives)
- Hot sauce or salsa
Instructions
- Prepare the Campfire: If cooking over a campfire, make sure you have a sturdy cooking grate or cast-iron skillet placed securely over the flames. If using a camp stove, set it up according to the manufacturer’s instructions and heat it to medium-high heat.
- Cook Potatoes: Heat a drizzle of olive oil or a pat of butter in a large cast-iron skillet or Dutch oven over the campfire or camp stove. Add the diced potatoes to the skillet and cook, stirring occasionally, until they start to brown and become tender, about 8-10 minutes.
- Add Vegetables: Add the chopped onion and diced bell pepper to the skillet with the potatoes. Cook, stirring occasionally, until the vegetables are softened and lightly browned, about 5 minutes.
- Add Sausage: Add the sliced cooked sausages to the skillet with the potatoes and vegetables. Stir to combine and cook for an additional 2-3 minutes to heat the sausage through.
- Make Wells for Eggs: Using a spatula, make four wells in the potato mixture. Crack one egg into each well. Season the eggs with salt and pepper, to taste.
- Cook Eggs: Cover the skillet with a lid or aluminum foil to help the eggs cook evenly. Cook for 5-7 minutes, or until the eggs are cooked to your desired doneness. For runny yolks, cook for less time; for fully cooked yolks, cook for longer.
- Serve: Once the eggs are cooked to your liking, remove the skillet from the heat. Sprinkle with optional toppings such as shredded cheese and chopped fresh herbs, if desired. Serve the Campfire Breakfast Hash hot, straight from the skillet, with hot sauce or salsa on the side if desired.
